The multi-faceted and aptly-named Mosaic hop is the star of this juicy, resinous, low ABV expression of IPA.
3 Fonteinen “Intens Rood” (Intense Red) is the result of macerating hand-picked whole sour cherries on lambic for at least six months, in a proportion of one kilogram of fruit per litre of lambic, and is then blended again with more lambic to obtain a minimum intensity of 450 grams of fruit per liter. The kriek lambic ferments in the bottle for at least another six months and develops into an intense wine-like fruit lambic. This bottle fermented, unfiltered and unpasteurised lambic is all-natural with no artificial juices, syrups, or sugars added. Traditional Lambic is living, cultural heritage rooted in the Zenne valley!
Untreated and bottled in its natural state of yeasty turbidity, this is a top fermented beer for the epicure. Its light honey colour makes it an immediate eyecatcher. Then there’s the opalescence and fine structure of the yeast turbidity. At the same time, the creamy, fine pored head invites you to get to know this light Weissbier from the Holy Mountain. First, distinctive fruity aromas like banana and honeydew melon come to the fore, followed by fine cloves. It is a very tangy, refreshing treat with the conviction of a full, soft body. It concludes on a finely balanced interplay of light sweet honey and a delicate acidity with undertones of bitter hoppiness that quickly subside into a harmonious aftertaste.

Back in 2019, we decided to experiment with British made fruit purees to slightly deviate from our usual foraging/locally sourcing of whole fruit. You may have tried our Blueberry Sour or Blackcurrant & Rye Sours released earlier in 2021. While we used a substantial amount of puree in each of those beers, we still found we had some remaining. We decided to take a barrel we had been ageing to potentially use in our Stupid Sexy Suffolk Blend, add the purees and see where it went! The base of our own malted barley with a touch of rye malt for a light spice picks up on the fruity tannins with the oak coming through. Light acetic complexities further push the fruit to the fore.

Birra Moretti is a quality beer made in the traditional way. It is the result of a production process that has remained almost unchanged since 1859. The best raw materials are used to make Birra Moretti, as well as a special blend of high quality hops that gives it a unique taste and fragrance, enhancing its perfectly balanced bitter taste. It is a bottom fermented beer with a golden colour. This colouring is a result of the type of malt used in brewing. Its alcohol content is 4.6% alcohol by volume. It is not a strong beer and is therefore perfect for drinking at lunch, at dinner or for evenings out with friends.

The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains. Sweet, biscuit malt backbone, supported by pleasant warmth and spice, finishes well rounded, floral, and dry. Color and Sight: Pale blond, the fine and regular sparkle creates a nice, stable foam head. Scent: Slightly malty, heavy touch of alcohol, spicy. Taste: A good shot of alcohol ignites in the mouth, as it were, which really warms the tongue and palate. The taste is also characterized by its roundness. The finish is strong, long and dry bitter.

Duchesse de Bourgogne from Brouwerij Verhaeghe is the traditional Flemish red ale. This refreshing ale is matured in oak casks; smooth with a rich texture and interplay of passion fruit, and chocolate, and a long, dry and acidic finish. After the first and secondary fermentation, the beer goes for maturation into the oak barrels for 18 months. The final product is a blend of younger 8 months old beer with 18 months old beer. The average age of the Duchesse de Bourgogne before being bottled is 12 months.

Inspired by an amuse bouche often prepared by one of our Brewer's wives, Gillian brings white pepper, strawberry, and honey to a harmonious blend of "mouth amusement". The ingredients are added at different stages to a Saison, and fermented with a normal Belgian yeast as well as a Champagne yeast.

Halia is a farmhouse ale aged in wine barrels with whole peaches, resulting in bright, effervescent fruit notes in a soft, hazy body that finishes slightly tart and sweet with the pleasant character of ripe, juicy peaches. Literally meaning “remembrance of a loved one” in Hawaiian, Halia was brewed in memory of the dear friend of one of our brewers who loved peaches. Malts: Pilsner, 2-Row & Torrified Wheat . Hops: Amarillo.

The beer brings together the rich history and heritage of London Porters, with the modern techniques of brewing nitro beers. This is our bourbon barrel-aged imperial brown ale, Mash, stretching to new levels. Mash & Coconut features nearly 400lbs. of toasted coconut per batch, which ratchets up the complex, native coconut character and complements the oaky and vanilla notes that are imparted to the beer as part of its extensive maturation in bourbon barrels.

Inspired by great Trappist ales, our complex Belgian Style Pale Ale is fermented with the wild yeast Brettanomyces. The Midway was the park at the heart of the 1893 world’s fair in Chicago to which people came from far and wide to enjoy. Inspired by this, our Midway Session IPA has the citrus hop hit people love in an easy drinking IPA for everyone.

A stout at the peak of summer? You must be mad, Polly’s! Well, we’ve never been ones to completely toe the line here in this sleepy corner of North Wales. Wanting to re-ignite the age old debate that always followed these beers of whether it’s a stout or a Black IPA (it’s a stout, seriously), we’ve dipped our toes back into the world of the dark side, and hopped this India Stout with a gentle 20kg cold side addition of Mosaic to offset a 5kg hot side addition of the same varietal to add a classic Polly’s hoppy bite to all those amazing roasted barley flavours. Expect a swag bag of bitter, piney and resinous hops paired up with coffee, chocolate and smokey notes for a beer that is as complex as it is delicious.

The idea was to create a beer that we could drink from 8am in the morning, all day, every day! A brew that you could make your ‘go to’ at any time and still function. So we took decided that this needed to be low ABV, ultra-pale, crisp, light and bang on in your face with the hops! The name comes from an old Black Country term in the middle of England my Great Granddad used to shout on his way out the door: “I’m going down the pub for a pint of neck oil!” Basically he wanted to drink his favourite local beer on mass and lube his thirst after a long hard day in the foundry. This is exactly what we do at the brewery. It’s our everyday, all day, go to Session IPA. Malt Extra Pale Hops Magnum, Columbus, Centennial, Simcoe, Amarillo, Galaxy, Vic Secret, Mosaic.
Old World Style Porter
NOTE: The ABV-value of this beer varies, in the United States 6.9% is used. The Orval’s brewery produces only one beer to sell, a beer with a high fermentation that continues in the bottle. It is 6.2% ABV. This beer is brewed exclusively from spring water, barley malt, hop cones, candy sugar, and yeast. The aroma and the fine taste are due more to the hop cones and the yeast than to the malt that is used. What’s special about Orval’s beer is that hops are added at two different stages of the production process. First, in the brewing room, a large quantity of very fine hops are added – this produces the famous bitter taste and is the reason why the beer keeps for a longer period of time. Later, in the storage cellars, hops are once again added. This is the so-called British “dry hopping,” which produces the delightful aroma that completely enraptures even the most carefully forewarned taster. In the tasting room, Orval’s beer and cheese make a really good pair: the unique shape of the bottle and the glass, the design of the label, the coasters and other publicity materials – it’s all a legacy from the early 1930’s.
The lambic in foeder no. 31 aged for four and a half years before it became this Oude Geuze. It’s typified by its fine carbonation and pleasant cognac-like nose. The fluent and mellow but strong aroma with hints of apricots and walnuts is supported by a clear oak character. Brewed on 30 November 2015, bottled on 14 May 2020.
One of the intriguing aspects of tarot is the juxtaposition of cards’ appearances and their range of interpretations - not everything is as it originally seems. We wanted to recreate this contrast of darkness and light by pairing Amy’s bright, bold, and colourful artwork with an inky, ominously dark Imperial Stout. Continuing along the Lovers’ theme, taking inspiration from Valentines chocolate boxes presented the opportunity for further contrast - recreating the sensation of bright, sweet, red-fruit soft centres glimmering through the cracks in dark, bittersweet chocolate.
Inspired by our home on the edge of the Pacific Ocean and brewed using all Australian barley, wheat and Galaxy hops, Pacific Ale is cloudy and golden with a big fruity aroma and a refreshing finish. After being dry hopped at the end of fermentation, our Pacific Ale is then drawn straight from the storage tank at the brewery into kegs and bottles.
Saturated in Citra, Mosaic and Idaho 7 this 6% London Fog IPA is brimming with fruit bubblegum flavours of mango, orange peel, pineapple and ripe flat peaches.
This sour IPA is hopped with Ekuanot, Bravo and Mosaic to create the biggest grapefruity hop profile we could muster, but we've also included grapefruit zest and juice for good measure. Lactose rounds things out with a sweet and smooth touch.
